Ingredients:
  • 1.3333333730698 cups water
  • 0.66666668653488 cup quinoa
  • 0.25 cup shredded unsweetened coconut
  • 0.25 cup brown sugar
  • 2 tablespoons whole wheat flour
  • 0.25 teaspoon salt
  • 2 large eggs, beaten
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease 24 non-stick mini-muffin cups.
  • In a saucepan, bring water and quinoa to a boil. Cover, reduce heat to medium-low, and simmer for 15 to 20 minutes until quinoa is tender and water is absorbed.
  • Combine coconut, brown sugar, whole wheat flour, cinnamon, and salt in a bowl. Mix in quinoa and eggs until fully incorporated. Spoon mixture into muffin cups.
  • Bake in the oven until perfectly crispy and golden brown, about 15 to 20 minutes.
