Cirak (Slovak Easter Cheese)

Slovak Easter cheese, Cirak, mild in flavor, served with baked ham and beet horseradish on Easter Sunday.
Ingredients:
  • 4 cups milk
  • 12 eggs
  • 1 teaspoon salt
Instructions:
  • In a bowl, warm milk over a saucepan of simmering water. Once warm, gently crack eggs into the milk while stirring constantly to avoid scorching. Stir slowly until mixture resembles scrambled eggs.
  • Transfer the mixture into a cheesecloth bag, tie securely, and hang to drain for 1 to 2 hours. Then, place the bag on a cooling rack over a pan or bowl, add a heavy object on top to press out the liquid (a cast iron skillet with heavy cans works great), and press for about 2 hours.
  • Gently discard the weights and cheesecloth from the cheese. Chill the cheese for several hours or overnight before slicing and serving.
