Easy Greek-inspired roasted potatoes with zesty citrus and herb coating - quick weeknight side dish.
Ingredients:
  • cooking spray
  • 0.5 cup orange juice
  • 0.25 cup olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1.5 tablespoons crushed dried oregano
  • 3 pounds fingerling potatoes
  • 3 tablespoons chopped fresh thyme
Instructions:
  • Preheat your oven to 400°F (200°C) and generously spray a 9x13-inch glass baking dish with cooking spray.
  • In a food processor, blend together orange juice, olive oil, garlic, mustard, lemon juice, oregano, salt, pepper, cumin, and turmeric until a thick sauce forms.
  • Spread the potatoes in the pan and drizzle the savory sauce over them. Mix well until evenly coated.
  • Bake covered in a hot oven for 40 minutes, then uncover and bake for an additional 20 minutes until potatoes are tender. Sprinkle with fresh thyme on top.
