Quick and easy tartlets made with pre-made crusts and a shortcut in the microwave for a speedy bake time of just 10 minutes.
Ingredients:
  • 12 frozen sweet shortcrust tart cases
  • 107.50 gm caster sugar
  • 32.50 gm cornflour
  • 86.63 gm freshly squeezed orange juice
  • 86.63 gm freshly squeezed lime juice
  • 86.63 gm freshly squeezed lemon juice
  • 2 egg yolks
Instructions:
  • In a heatproof microwave-safe bowl, combine sugar and cornflour. Mix all juices together and slowly pour into the cornflour mixture, whisking constantly until smooth. Microwave on MEDIUM (50%) power for 6 to 7 minutes, whisking every minute, until the mixture comes to a boil.
  • Add the yolks one by one while gently stirring. Cover the surface with plastic wrap and chill in the refrigerator until cold.
  • Preheat the oven to 190°C. Arrange the tart cases on a baking tray and bake for 10 minutes or until lightly golden. Let them cool before serving.
  • Carefully dollop the creamy curd into the delicate tart cases and enjoy your delicious creation.
