Claire's Mediterranean pizzas

Satisfy your pizza cravings with a homemade, tastier version.
Ingredients:
  • 437.50 gm lukewarm water
  • 2 x 7g sachets dried yeast
  • 9.00 gm white sugar
  • 1125.00 ml plain flour
  • 9.60 gm salt
  • 4 tomatoes, halved, deseeded, diced
  • 1 tsp dried oregano
  • 56.88 gm olive oil
  • 4 slices prosciutto, roughly torn into strips
  • 125.00 ml pitted kalamata olives, halved
  • 200g mozzarella, roughly torn into pieces
  • 250.00 ml basil leaves
Instructions:
  • Preheat the oven to 220°C and grease 4 35cm-square pieces of foil. In a jug, combine water, yeast, and sugar. In a bowl, mix flour and salt, then make a well in the center. Slowly add the yeast mixture while stirring with a knife until combined (adjust with water or flour if necessary). Transfer the dough to a floured surface and knead for 5 minutes before returning it to the bowl and setting it aside.
  • Prepare the topping by mixing together tomatoes, garlic, oregano, and oil in a bowl. Season with salt and pepper, then stir to combine.
  • Gently press down on the dough to deflate it. Separate into four portions. Flatten each portion into a 5mm-thick, 20cm-wide circle. Transfer to foil and layer with tomato mixture, prosciutto, olives, and mozzarella.
  • Bake the pizzas for 12 to 15 minutes, rotating them halfway through, until the crust is crispy and golden. Garnish with fresh basil and serve.
