Try this refreshing Shrimp Ceviche with Clamato for a crowd-pleasing dish that's ideal for summer gatherings.
Ingredients:
  • 2 pounds cooked shrimp
  • 1 small red onion, thinly sliced
  • 1 fresh jalapeno chile, seeded and minced
  • 1 cucumber, peeled, seeded, thinly sliced
  • 0.5 bunch cilantro, finely chopped
  • 2 limes, juiced
  • 0.5 cup Clamato® Tomato Cocktail
Instructions:
  • Combine shrimp, onion, jalapeño, cucumber, and cilantro in a bowl.
  • Combine fresh lime juice and Clamato, then toss until thoroughly mixed.
  • Refrigerate for 30 minutes until perfectly chilled.
  • Enjoy chilled with tostadas (hard tortillas) or soda crackers.
