Clara's White German Chocolate Cake

Decadent white chocolate cake with coconut and pecans in every layer.
Ingredients:
  • 4 (1 ounce) squares white chocolate, chopped
  • 2.5 cups sifted cake flour
  • 1 teaspoon baking powder
  • 1 cup butter
  • 2 cups white sugar
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup flaked coconut
Instructions:
  • Preheat oven to 350°F (175°C) and prepare three 9-inch pans by greasing and flouring them. Then, sift together the flour, baking powder, and salt, and set aside.
  • Combine fluffy butter and sugar in a large bowl. Add yolks one at a time, then mix in melted chocolate and vanilla. Alternate between mixing in flour mixture with buttermilk. Fold in nuts and coconut.
  • In a spacious glass or metal mixing bowl, whisk egg whites until they form stiff peaks. Gently fold in 1/3 of the whites into the batter, then swiftly fold in the rest until no streaks are visible. Transfer batter evenly into the prepared pans.
  • Place the cake in the preheated oven for 40 to 45 minutes until a toothpick inserted in the center comes out clean. Let it cool.
