Clare's nostalgic dish from Señor Dick's in Cornwall - a spicy, smoky, sizzling flavor bomb.
Ingredients:
  • olive oil
  • ½ teasapoon sweet smoked paprika
  • ½ teaspoon mild chilli powder
  • ½ teaspoon ground cumin
  • 1 lime
  • 1 large red onion
  • 1 yellow pepper
  • 1 red pepper
  • 4 x 120 g skinless free-range chicken breasts
  • 4 wholemeal flour tortillas
  • 4 sprigs of fresh coriander
  • 4 tablespoons natural yoghurt
  • 2 medium ripe tomatoes
  • 2 tablespoons chipotle paste
  • ½ teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 pinch of mild chilli powder
  • 15 g quality dark chocolate (70%)
Instructions:
  • In a bowl, combine 1 tablespoon of oil, spices, and half of the lime juice. Slice the onion, peppers, and chicken into strips and add to the bowl with a pinch of sea salt and black pepper. Marinate while preparing the mole sauce. Heat 1 tablespoon of oil in a pan over medium heat. Add chopped tomatoes, chipotle paste, and spices. Cook for 2-3 minutes, then add 200ml of hot water. Simmer for 10 minutes until thickened, then stir in grated chocolate. Set aside. Wrap tortillas in foil and warm in the oven. In a large frying pan, heat 1 tablespoon of oil over medium-high heat. Cook the chicken and veggies for about 6 minutes, turning halfway. Warm tortillas in the oven for 5 minutes. Assemble the fajitas: spread mole sauce on a tortilla, top with chicken and veggies, yogurt, coriander, lime juice. Serve with guacamole on the side. Enjoy!
