Classic nicoise salad

Make a classic French salad with potatoes, eggs, and olives - simply delicious!
Ingredients:
  • 100g new potatoes
  • 100g green beans, trimmed, halved
  • 40.00 ml red wine vinegar
  • 5.90 gm Dijon mustard
  • 2 garlic cloves, finely
  • Pinch of caster sugar
  • 100ml extra virgin olive oil
  • 2 baby cos lettuces, leaves separated
  • 6 anchovy fillets, halved lengthways
  • 12 nicoise or other small black olives
  • 62.50 ml chopped flat-leaf parsley
Instructions:
  • Gently place eggs in cold water in a small pan and bring to a boil. Cook for 4-5 minutes, then transfer to ice water to chill quickly.
  • Place potatoes in a pot of cold salted water and bring to a boil. Simmer for 10 minutes until tender, adding beans for the final 2 minutes of cooking. Drain and cool beans in iced water. Once the potatoes are cool, halve or quarter if large.
  • In a small bowl, combine vinegar, mustard, garlic, sugar, sea salt, and freshly ground black pepper. Gradually whisk in the oil until thickened.
  • Peel hard-boiled eggs and cut them into quarters. Combine them in a bowl with lettuce, boiled potatoes, green beans, anchovies, olives, and fresh parsley.
  • Drizzle the dressing over the dish and delicately mix everything together.
