Classic ratatouille

Try this flavorful and healthy Mediterranean veggie stew for a delicious midweek meal.
Ingredients:
  • 2 red onions
  • 4 cloves of garlic
  • 2 aubergines
  • 3 courgettes
  • 3 red or yellow peppers
  • 6 ripe tomatoes
  • ½ a bunch of fresh basil (15g)
  • olive oil
  • a few sprigs of fresh thyme
  • 1 x 400 g tin of quality plum tomatoes
  • 1 tablespoon balsamic vinegar
  • ½ a lemon
Instructions:
  • Prepare the vegetables by peeling and cutting the onions into wedges, finely slicing the garlic, trimming the aubergines and courgettes, deseeding the peppers, and chopping them into 2.5cm chunks. Roughly chop the tomatoes and set aside. Heat 2 tablespoons of oil in a large casserole pan over medium heat. Cook the aubergines, courgettes, and peppers in batches until golden and softened. Transfer to a bowl. In the same pan, cook the onion, garlic, basil stalks, and thyme leaves until softened and golden. Return the cooked vegetables to the pan and add fresh and tinned tomatoes, balsamic vinegar, salt, and pepper. Simmer covered for 30-35 minutes until reduced and sweet. Finish with torn basil leaves and lemon zest, adjust seasoning, and serve with bread or rice.
