Citrusy clementine salad with sweet dates and tangy Stilton bleu cheese - a perfect winter dish!
Ingredients:
  • 6 clementines
  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons honey
  • 1/4 cup canola oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 8 cups mixed spring greens
  • 3/4 cup chopped dried Medjool dates
  • 3/4 cup crumbled Stilton cheese (3 oz)
  • 1/2 cup coarsely chopped candied walnuts
Instructions:
  • Zest 2 clementines to get 1 teaspoon of zest. Juice 2 clementines to get 2 tablespoons of juice. Peel and slice the remaining 4 clementines.
  • Combine clementine juice, peel, vinegar, honey, oil, salt, and pepper in a small bowl and whisk until well blended.
  • Place a bed of salad greens onto a platter. Layer with sliced clementines, dates, Stilton cheese, and candied walnuts. Finish by drizzling with vinaigrette or serve it on the side.
