Delicious puff pastry cookies baked on dowels, filled after baking for a delightful treat. Use 4-inch dowels for perfect cookies on insulated sheets to prevent breakage.
Ingredients:
  • 1 pound butter, softened
  • 3 cups all-purpose flour
  • 2 tablespoons white sugar
  • 2 egg yolks
  • 1.25 cups ice water
  • 1 cup milk
  • 1.5 cups shortening
  • 8 cups confectioners' sugar
  • 1 (7 ounce) jar marshmallow creme
  • 1 teaspoon vanilla extract
Instructions:
  • Combine 1/4 pound of butter with 3 cups of flour, 2 tablespoons of white sugar, egg yolks, and water, using a pastry blender to achieve a pie dough-like texture.
  • After chilling for 1 hour, roll out the dough on a floured pastry sheet. Spread another 1/4 pound of butter over the dough, fold it together, and refrigerate for 1 hour. Repeat this process until all the butter is used.
  • Divide the dough into quarters, then wrap each portion in plastic wrap and refrigerate until chilled.
  • Remove a quarter at a time and let it sit at room temperature until soft enough to roll the dough.
  • Roll out dough on a floured surface and cut into 1/2 inch wide X 4-5 inch long strips. Wrap them around clothes pins or dowel pins, pinching the ends together.
  • Place in a 400°F (200°C) oven for 12-15 minutes until lightly browned. Remove from sticks while still warm and let cool completely.
  • To prepare the filling, heat 1 cup of milk and 1/2 cup of flour in a saucepan over medium heat until it thickens, stirring constantly. Allow it to cool before using.
  • Combine shortening, confectioners' sugar, marshmallow cream, and vanilla, then mix until fluffy. Fill cooled pastry curls with the filling.
