Transform leftover ham into a delicious Cobb salad with homemade dressing.
Ingredients:
  • 0.5 cup extra-virgin olive oil
  • 0.25 cup white balsamic vinegar
  • 1 clove garlic, minced
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 6 cups torn iceberg lettuce
  • 1.5 cups chopped ham
  • 1 avocado, diced
  • 0.5 cup crumbled blue cheese
  • 1 (2.5 ounce) can sliced black olives
  • 8 grape tomatoes, halved
  • 2 medium mushrooms, sliced
  • 2 medium hard-boiled eggs, sliced
Instructions:
  • Combine olive oil, vinegar, garlic, salt, and pepper in a small bowl and whisk until well blended.
  • Combine the lettuce, ham, avocado, blue cheese, olives, tomatoes, and mushrooms in a large bowl, and toss until well mixed.
  • Divide the lettuce mixture evenly between 2 plates. Garnish each plate with a sliced egg and generously drizzle with dressing before serving.
