Slow cook comforting cock-a-leekie soup with chicken, leeks, and barley for a cozy meal.
Ingredients:
  • 20 cups water
  • 1 (2 to 3 pound) whole chicken
  • 0.5 white onion, chopped
  • 2 large carrots, chopped
  • 2 celery ribs, chopped
  • 6 large leeks, cut into 1-inch chunks, or more to taste
  • 0.66666668653488 cup pearl barley
  • 1 teaspoon celery seed
  • 1 teaspoon ground cloves
  • 1 teaspoon ground black pepper
Instructions:
  • In a large stockpot, bring water to a lively boil. Add chicken and simmer for about 1 hour until fully cooked and the juices run clear. Ensure chicken reaches an internal temperature of at least 165°F (74°C) near the bone using an instant-read thermometer.
  • Remove the cooked chicken from the stockpot, allowing the flavorful broth to remain, and let it cool. Discard the skin, shred the meat, and return the bones to the pot. Add onion, carrots, and celery, then simmer the stock for approximately 1 hour.
  • Soak leeks in a refreshing water bath for 10 minutes, then drain well.
  • Strain the stock to remove the bones and vegetables using a slotted spoon; discard them.
  • Combine chicken meat, leeks, barley, celery seed, cloves, salt, and black pepper in stock. Let simmer for about 1 hour until barley is tender and flavors meld together beautifully.
