Coconut, buckwheat and date bars

Boost your day with irresistible and nutritious date bars!
Ingredients:
  • 150g (1 1/2 cups) rolled oats
  • 10g (1 cup) puffed buckwheat
  • 30g (1/3 cup) desiccated coconut
  • 20.00 ml chia seeds
  • 12.00 gm sesame seeds
  • 2.50 gm ground cinnamon
  • 110g (1/2 cup) pitted fresh dates, finely chopped
  • 175g (1/2 cup) honey
  • 187.50 ml nut butter (such as almond, cashew or peanut)
  • 60ml (1/4 cup) coconut oil
  • 50g 70% cocoa dark chocolate, melted
Instructions:
  • Prepare a 20cm x 30cm lamington pan by greasing it and lining the base and two long sides with baking paper.
  • Combine rolled oats, buckwheat, desiccated coconut, chia seeds, sesame seeds, cinnamon, and dates in a large bowl.
  • Combine honey, nut butter, coconut oil, and vanilla extract in a small saucepan. Cook over low heat until smooth. Mix with dry ingredients until evenly coated.
  • Press the mixture firmly into the pan using wet hands, then smooth the surface with the back of a spoon. Refrigerate until set, approximately 1 hour.
  • After setting, slice into 16 delicious bars and generously drizzle with melted chocolate. Keep these irresistible treats in the fridge in an airtight container until you're ready to indulge.
