Coconut and lime jellies

Transport yourself to a tropical paradise with these coconut delights.
Ingredients:
  • 250ml (1 cup) boiling water
  • 1 x 85g pkt lime-flavoured jelly crystals
  • 1 x 270ml can Coconut Cream
  • 25g (1/3 cup) shredded coconut
  • 12 drained canned lychees
Instructions:
  • Combine the water and jelly crystals in a large heatproof jug, stirring until the jelly fully dissolves.
  • Swirl in the luscious coconut cream. Portion the jelly mixture into elegant serving glasses. Chill on a baking tray in the fridge for 4 hours or until perfectly set.
  • Toast coconut in a small frying pan over medium-low heat, stirring occasionally, for about 2 minutes until golden brown. Transfer to a heatproof bowl and allow to cool.
  • Arrange the lychees on top of the jellies and generously sprinkle with coconut before serving.
