Make your own delicious green chicken curry at home quicker than going out to eat.
Ingredients:
  • 36.40 gm peanut oil
  • 650g Free Range Chicken Thigh, trimmed, thinly sliced
  • 87.50 gm Thai green curry paste
  • 270ml can coconut cream
  • 24.40 gm fish sauce
  • 8.00 gm brown sugar
  • 250g cherry tomatoes, halved
  • 250.00 ml coriander leaves
  • 21.00 gm lime juice
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat the wok until it’s smoking hot. Add 1 tablespoon of oil followed by half of the chicken. Stir-fry for 2 to 3 minutes until it turns a beautiful golden color. Transfer the cooked chicken to a plate and then repeat the process with the remaining oil and chicken.
  • Heat up the curry paste in the wok until aromatic. Add back the chicken with its juices, then mix in the coconut cream, fish sauce, brown sugar, and tomatoes. Cook until tomatoes collapse. Finish by stirring in coriander and lime juice. Serve with steamed jasmine rice and lime wedges.
