Try these irresistible Asian coconut chicken lettuce cups for a burst of flavor and freshness. Perfect for entertaining with fried shallots, coriander, and lime wedges on the side. Ideal for a healthy and flavorful appetizer option!
Ingredients:
  • 2 Australian Chicken Breast Fillets
  • 1 long red chilli, quartered (optional)
  • 1 stem lemongrass, quartered or 1 tbsp lemongrass paste
  • 400ml light coconut milk
  • 2 baby cos lettuce
  • 2 spring onions, thinly sliced
  • 2 long red chillies, extra, thinly sliced (optional)
  • 60ml lime juice
  • 16.00 gm brown sugar
  • 24.40 gm fish sauce
Instructions:
  • In a medium saucepan, combine the chicken, chili (if using), lemongrass, and coconut milk. Cover the chicken with enough water. Bring to a simmer over high heat, then reduce heat to low and simmer for 10 minutes or until the chicken is cooked through. Allow the chicken to cool completely in the poaching liquid.
  • Discard the poaching liquid and shred the chicken.
  • Separate the outer leaves from the lettuce and set aside 16. Finely slice the rest of the lettuce leaves.
  • Place the lettuce leaves on a serving platter, then layer with sliced chicken, spring onion, and optional extra chili.
  • Combine lime juice, sugar, and fish sauce in a screw-top jar, shake well, then drizzle over the lettuce cups on the platter.
