Coconut milk infused green beans and chicken - a quick and delicious dish!
Ingredients:
  • 1 (14 ounce) can coconut milk
  • 6 cups trimmed green beans
  • 2 teaspoons vegetable oil
  • 3 large skinless, boneless chicken breast halves, cut into chunks
  • 1 onion, chopped
  • 3 tablespoons coconut butter
  • 3 tablespoons almond butter
Instructions:
  • In a large saucepan, gently warm the coconut milk. Simmer the green beans in the coconut milk until tender, approximately 10 minutes.
  • In a skillet over medium heat, sizzle the chicken and onion in vegetable oil until the chicken is cooked through, about 10 minutes.
  • Combine the chicken mixture with the green beans and cook them together for 2 minutes, then transfer to a serving platter.
  • Combine the coconut butter and almond butter in a saucepan over gentle heat until melted; generously drizzle the mixture over the chicken and green beans.
