Coconut custard pie with flaked coconut folded into creamy custard.
Ingredients:
  • 0.66666668653488 cup white sugar
  • 0.33333334326744 cup all-purpose flour
  • 1.6666667461395 cups milk
  • 0.33333334326744 cup heavy cream
  • 4 egg yolks, beaten
  • 1.5 cups flaked coconut
  • 1 (9 inch) pie shell, baked
Instructions:
  • In a heavy saucepan, whisk together sugar, flour, milk, and cream. Cook over medium-high heat, stirring constantly, until the mixture thickens and bubbles. Let it boil for one more minute, then take it off the heat.
  • Beat the egg yolks in a medium bowl until smooth. Gradually mix in 1/4 of the hot mixture. Pour the yolks back into the remaining hot mixture, stirring constantly. Cook and stir for 2 minutes before removing from heat. Stir in coconut and pour the mixture into the baked pie shell.
  • Refrigerate for several hours or overnight until ready to serve.
