One-pot haddock curry with aromatic curry and coconut flavors ready in 30 minutes.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound haddock, cut into cubes
  • 0.25 cup chopped red bell pepper
  • 1 shallot, finely chopped
  • 1 clove garlic, minced
  • 1 (13.5 ounce) can full-fat coconut milk
  • 2 teaspoons red curry paste
  • 2 teaspoons curry powder
  • 0.75 teaspoon ground coriander
  • 0.75 teaspoon ground turmeric
  • 2 cups baby spinach
  • 1 cup shelled edamame
  • 2 green onions, sliced
Instructions:
  • In a large pot, heat olive oil until sizzling. Add haddock and sear until golden brown on both sides, about 3 minutes each. Stir in red bell pepper, shallot, and garlic; sauté until shallot is tender, around 3 minutes.
  • 1. In a pot, pour in coconut milk and whisk in curry paste, curry powder, coriander, and turmeric. 2. Reduce the heat and simmer until the coconut milk is reduced by 1/4, about 6 to 7 minutes. 3. Add spinach and edamame, and cook until the spinach is wilted and the edamame is heated through, about 3 to 4 minutes. 4. Sprinkle green onions over the curry before serving.
