Colorful and flavorful classics perfect for kids' parties or on-the-go lunches.
Ingredients:
  • 600.00 gm pure icing sugar
  • 1.25 gm cream of tartar
  • 595.00 gm desiccated coconut
  • 2 x 390g can sweetened condensed milk
  • Pink food colouring
  • 4.40 gm vanilla essence
Instructions:
  • Prepare two 18cm square cake pans by greasing the bottom. Line both the bases and sides with baking paper, making sure the paper extends 2cm above the edges of the pans.
  • Sift icing sugar and cream of tartar into a large bowl, then add coconut and condensed milk. Mix thoroughly to combine before transferring half of the mixture to a separate bowl.
  • Color one portion pink with food coloring. Mix vanilla into the remaining portion. Combine both portions thoroughly using your hands, as the mixture may be firm.
  • Evenly distribute the vanilla mixture between the 2 cake pans, pressing firmly. Top with the pink mixture evenly, pressing firmly. Cover with plastic wrap and refrigerate for 3 hours or until set.
  • Take out the coconut ice from the pans, slice into 3cm squares for serving, and store in an airtight container.
