Be the hit of the party with classic coconut ice squares.
Ingredients:
  • 600.00 gm pure icing sugar
  • 1.25 gm cream of tartar
  • 595.00 gm desiccated coconut
  • 2 x 390g cans sweetened condensed milk
  • 2 to 3 drops red food colouring
  • 4.40 gm vanilla essence
Instructions:
  • Prepare two 18cm square cake pans by greasing and lining them with baking paper.
  • Sift icing sugar and cream of tartar into a large bowl. Add coconut and condensed milk. Mix thoroughly. Transfer half of the mixture to another bowl.
  • In one bowl, swirl in red food colouring. In the other, pour in vanilla. Gently mix each until fully incorporated.
  • Evenly distribute the vanilla mixture into the 2 cake pans and press firmly. Then, distribute the pink mixture evenly onto the vanilla layer and press it down. Cover the pans with plastic wrap and refrigerate for 3 hours or until set.
  • Take out the coconut ice from the pans. Cut into 3cm squares for serving and store in an airtight container.
