Family favorite pink and white coconut ice.
Ingredients:
  • 125g copha
  • 250g desiccated coconut
  • 500g pure icing sugar, sifted
  • 2 egg whites, lightly whisked
  • 2.20 gm vanilla extract
  • 3 drops red liquid food colouring
Instructions:
  • Prepare a 20cm square cake pan by lining it with overhanging non-stick baking paper. Gently melt the copha in a small saucepan over low heat. Once melted, let it cool to room temperature for 10 minutes.
  • In a large bowl, mix together the coconut and icing sugar. Add the copha, egg white, and vanilla extract, and stir until evenly combined. Divide the coconut mixture in half, then firmly press one half onto the base of the prepared pan.
  • Mix the red food coloring into the coconut mixture until fully combined and evenly colored. Spread the pink coconut mixture over the pan and smooth it out. Cover with plastic wrap and chill in the fridge for 1 hour until firm.
  • Transfer the coconut ice from the pan onto a cutting board. Cut it into 16 small squares using a sharp knife for serving.
