Whip up zesty lemon drop cookies with coconut using instant pudding mix for a delightful treat.
Ingredients:
  • 1 cup butter, softened
  • 1 vanilla bean, split lengthwise and seeds scraped
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened shredded coconut
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Using an electric mixer, blend together butter, sugar, and vanilla seeds until creamy. Add eggs one at a time, beating until fluffy. Mix in vanilla and lemon extracts.
  • In a separate bowl, mix flour, coconut, pudding mix, baking soda, and salt. Add this mixture to the creamed mixture gradually, stirring until well combined. Drop spoonfuls of cookie dough onto baking sheets.
  • Bake until edges are light golden, 10-11 minutes in preheated oven. Let cool on baking sheets for 1-2 minutes before transferring to a rack to cool completely.
