Coconut cake with sweet lime syrup, perfect for family gatherings.
Ingredients:
  • 125g butter, chopped
  • 3 eggs, beaten
  • 193.13 gm milk
  • 225.00 gm self-raising flour, sifted
  • 268.75 gm caster sugar
  • 106.25 gm desiccated coconut
  • 3 limes, rind finely shredded, juiced
  • 112.50 gm white sugar
Instructions:
  • Preheat your oven to 180°C and prepare a 22cm springform cake pan by lightly greasing and lining it with parchment paper.
  • In a saucepan over medium heat, melt the butter (view shortcut hint). Pour the melted butter into a bowl, then mix in the eggs and milk until well combined.
  • In a bowl, mix together flour, sugar, and coconut. Pour in the milk mixture and stir until combined. Transfer the mixture to a pan and bake for 40 to 50 minutes, or until a skewer inserted in the center comes out clean.
  • Create a zesty lime syrup by mixing 1/2 cup of lime juice with sugar in a saucepan over medium heat. Let it come to a boil, then reduce the heat and let it simmer for 5 minutes until it thickens into a syrupy consistency. Gently stir in the lime rind for extra citrus flavor.
  • Microwave butter until almost melted, then let it stand for a minute. Add eggs and milk to the mixture and blend well.
