Coconut Meringue Cake

Perfect picnic cake that's great for any occasion.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup white sugar
  • 3 egg yolks
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon salt
  • 0.33333334326744 cup milk
  • 1 teaspoon vanilla extract
  • 3 egg whites
  • 1.5 cups flaked coconut
Instructions:
  • Preheat the oven and generously grease a 9x9-inch baking pan.
  • Cream together butter and 1/2 cup white sugar until it is light and fluffy. Mix in the egg yolks.
  • In a bowl, mix flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture in two batches, alternating with milk and vanilla, starting and finishing with the flour mixture. Spread the batter in the prepared pan.
  • Prepare the topping by beating egg whites until soft peaks form, gradually adding 1/2 cup of white sugar until stiff peaks form. Gently fold in the coconut. Spoon the mixture over the batter in various spots and spread evenly.
  • Bake in a hot oven until the meringue topping is lightly browned and a toothpick inserted in the center comes out clean, about 30-35 minutes.
