Coconut-crumbed prawns with lime aioli

Elevate your Valentine's Day with coconut prawns and lime aioli.
Ingredients:
  • 8 large green king prawns, peeled, deveined, tails intact
  • 62.50 ml plain flour
  • 32.50 gm Shredded Coconut
  • 125.00 ml panko breadcrumbs (see note)
  • Vegetable oil, for shallow-frying
  • 61.88 gm whole-egg mayonnaise
  • 1 small garlic clove, crushed
  • 1/2 tsp finely grated lime rind
  • 21.00 gm lime juice
Instructions:
  • Gently flatten prawns with the palm of your hand. Put flour in a bowl and add prawns, then toss to coat evenly.
  • In a shallow bowl, whisk together 1 egg and 2 tablespoons of cold water. On a plate, mix coconut and breadcrumbs. Dip each prawn in the egg mixture first, then coat with the breadcrumb mixture. Place the coated prawns on a plate and continue with the remaining prawns, egg mixture, and breadcrumb mixture.
  • In a large frying pan, heat oil until shimmering. Cook prawns for 2 minutes on each side, or until beautifully golden and fully cooked.
  • Prepare the aioli by mixing mayonnaise, garlic, lime zest, and lime juice in a bowl until well combined.
  • Enjoy juicy prawns with creamy aioli sauce.
