Upgrade your fries with a paleo twist - crispy taro root fries coated in shredded coconut.
Ingredients:
  • 2 tablespoons coconut milk
  • 1 tablespoon coconut oil, melted
  • 1 pinch Himalayan salt
  • 1 large taro root, peeled and sliced into thin strips
  • 1 tablespoon coconut flakes
Instructions:
  • Preheat oven to a piping hot 400 degrees F (200 degrees C).
  • Combine luscious coconut milk, fragrant coconut oil, and a pinch of salt in a bowl. Add in the taro root and gently coat with the tropical mixture.
  • Spread the taro root evenly on a baking sheet and generously sprinkle with coconut flakes, gently mixing them in using your hands.
  • Place the dish in the oven and bake for 15 minutes. Afterward, flip the ingredients and bake until the coconut turns golden and crispy, approximately 15 minutes more.
