Delicious paleo coconut-crusted tilapia fillets fried in coconut oil, served with a side of fresh green veggies.
Ingredients:
  • 2 tablespoons coconut oil
  • 0.75 cup unsweetened flaked coconut
  • 0.5 cup coconut flour
  • sea salt to taste
  • 3 large eggs, beaten
  • 4 (4 ounce) fillets tilapia fillets, or more as needed
Instructions:
  • Warm up the coconut oil in a skillet over medium-high heat.
  • Combine unsweetened coconut, coconut flour, and salt on a plate, blending the flavors to create a harmonious mixture.
  • Coat each tilapia fillet in beaten eggs, then press into the coconut mixture until fully coated. Lightly shake off any extra coconut. Place the coated fillets on a plate in a single layer without stacking.
  • Sear fillets in sizzling coconut oil until beautifully golden and fish easily flakes with a fork, about 5 to 7 minutes on each side.
