Delight in a fresh summer fruit medley glazed in syrup and topped with decadent pistachio cream.
Ingredients:
  • 185ml (3/4 cup) fresh orange juice
  • 100g (1/2 cup) caster sugar
  • 40.00 ml Cointreau liqueur
  • 4 large yellow peaches, peeled, stones removed, quartered
  • 150g punnet raspberries
  • 2 x 250g punnets strawberries, washed, hulled, halved
  • 125g punnet blueberries
  • 200ml double cream
  • 55g (1/3 cup) pistachios, coarsely chopped
Instructions:
  • In a small saucepan, gently heat the orange juice and sugar until the sugar dissolves, then simmer until the syrup slightly thickens, about 5 minutes. Stir in the Cointreau and let it cool.
  • In a spacious heatproof bowl, mix together the peaches, raspberries, strawberries, and blueberries. Drizzle the syrup over the fruit. Allow it to sit for 30 minutes to enhance the flavors.
  • Mix together the creamy texture of the cream and the nutty crunch of pistachios in a bowl. Enjoy alongside the vibrant berry salad.
