Decadent Irish mashed potatoes with greens, scallions, butter, and cream. Perfect for St. Patrick's Day or any occasion!
Ingredients:
  • 4 russet potatoes (2 to 2 1/2 pounds), peeled and cut into large chunks
  • Salt
  • 5 to 6 Tbsp unsalted butter (with more butter for serving)
  • 3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green
  • 3 green onions (including the green onion greens), minced (about 1/2 cup)
  • 1 cup milk or cream
Instructions:
  • Prepare the potatoes: Place them in a pot, cover with water, add 2 tablespoons of salt, and bring to a boil. Cook until fork tender, around 15 to 20 minutes. Drain in a colander.
  • Sauté the greens and green onions with butter: Heat the pot over medium-high heat, melt the butter, then add the greens. Cook until wilted and water is released, about 3 to 4 minutes. Add the green onions and cook for an additional minute.
  • Create the creamy mashed potatoes with greens: Combine milk or cream with potatoes, then reduce heat. Mash with a fork or potato masher, mixing in greens. Season with salt, serve hot with a pat of butter. Enjoy and share your feedback with us!
