Traditional Irish colcannon with creamy mashed potatoes, tender leeks, and cabbage for a comforting and delicious meal.
Ingredients:
  • 1 pound potatoes
  • 1 pound green cabbage, sliced
  • 2 small leeks, cleaned and thinly sliced
  • 1 cup milk, or as needed
  • 1 pinch ground mace
  • 0.5 cup butter
Instructions:
  • In a large pot, cover potatoes with salted water and bring to a boil. Simmer over medium-low heat until tender, about 15-20 minutes. Drain potatoes.
  • Once the potatoes are boiling, tenderize the cabbage by simmering or steaming in a separate pot. Drain, chop, and set aside to keep warm.
  • In a small pot, submerge the leeks in milk. Cook over low heat until the leeks are tender, around 3 to 5 minutes.
  • Season potatoes generously with salt, pepper, and mace, and mash until smooth. Mix in cooked leeks and milk, then add cabbage and heat until potatoes turn a pale green hue. Create a well in the center of the colcannon and pour in melted butter. Stir thoroughly and enjoy.
