Colorful pasta salad with cabbage, apple, and jicama - a delicious side dish.
Ingredients:
  • 4 ounces uncooked long fusilli (corkscrew) pasta or spaghetti
  • 1/4 small head green cabbage, finely shredded (1 cup)
  • 1/4 small head red cabbage, finely shredded (1 cup)
  • 1 unpeeled medium all-purpose red apple, chopped (1 cup)
  • 1 cup chopped peeled jicama
  • 1/4 cup sugar
  • 1/4 cup water
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon mustard seed
  • 1/8 teaspoon salt
Instructions:
  • Prepare and cook pasta according to package instructions. Then rinse and drain.
  • Combine pasta, cabbage, apple, and jicama in a large bowl.
  • Combine sugar, water, and vinegar in a microwave-safe 1-cup measuring cup. Cover with plastic wrap, leaving a vent. Microwave on High for 1 to 2 minutes until boiling; then stir. Microwave for an additional 30 seconds uncovered. Stir in mustard seed and salt. Pour over cabbage mixture and toss.
  • Chill in the refrigerator for approximately 2 hours until cold. Serve using a slotted spoon.
