Start with a top-notch pizza crust, pile on the delicious toppings for the perfect cheesy, meaty and herb-infused pizza.
Ingredients:
  • 325ml lukewarm water
  • 36.40 gm extra virgin olive oil, plus extra, to brush
  • 2 tsp (7g sachet) dried yeast
  • 10.00 gm raw caster sugar
  • 500g bread and pizza plain flour
  • 1⁄2.40 gm fine cooking salt
  • 20.00 ml finely chopped fresh rosemary leaves
  • 20.00 ml finely chopped fresh sage leaves
  • Fine semolina, to dust
  • 185ml (3/4 cup) Mutti Tomato Passata
  • 225g (1 1/2 cups) chopped fresh pineapple
  • 16 prosciutto slices, torn
  • 6 (110g each) fresh buffalo mozzarella, torn
  • Finely chopped fresh sage leaves, to serve
  • Finely chopped fresh rosemary leaves, to serve
  • Small fresh basil leaves, to serve
  • Extra virgin olive oil, to drizzle
Instructions:
  • In a jug, combine water, oil, yeast, and sugar. Let it sit for 5-10 minutes until frothy. On a clean work surface, sift flour and salt, then add rosemary and sage. Create a well in the center and pour in the yeast mixture. Gradually incorporate the flour with a fork until a dough forms. Knead for 15 minutes until smooth. Brush a large bowl with oil, place the dough inside, coat it, cover with a damp towel, and let it rest in a warm spot for 1 hour until doubled in size.
  • Preheat your oven to 240C/220C fan forced with a pizza stone or heavy-based baking tray inside. Punch down the dough, knead until smooth, and divide into 2 portions. Roll out one portion into a 35cm-wide disc on a lightly floured surface. Sprinkle semolina on the stone or tray. Gently transfer the dough onto the tray. Spread half of the passata, then top with half of the pineapple. Bake for 8-10 minutes until golden and crisp.
  • Layer half of the prosciutto, mozzarella, sage, rosemary, and basil on top. Drizzle with oil and season with pepper. Repeat with the remaining dough and toppings.
