Spicy Colorado green chili featuring roasted Hatch chiles adds flavor and heat to your favorite dishes.
Ingredients:
  • 1 pound Hatch chile peppers
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced, or more to taste
  • 1 tablespoon all-purpose flour
  • 5 cups vegetable broth
  • 2 tablespoons ground cumin
  • 2 tablespoons chili powder, or to taste
Instructions:
  • Position the oven rack 6 inches below the broiler, then preheat the broiler in the oven.
  • Cover a baking sheet with aluminum foil and arrange Hatch chile peppers on it.
  • Broil the peppers until the skin blackens and blisters, turning once, for 6 to 8 minutes. Place in a bowl, seal tightly with plastic wrap, and allow to cool for about 20 minutes. Peel, seed, and dice the peppers.
  • In a large pot over medium heat, sauté onion and garlic in olive oil until softened, about 5 minutes. Add diced chile peppers and tomatoes, cooking until heated through for another 5 minutes. Sprinkle flour into the pot.
  • In a pot, combine broth with cumin, chili powder, and salt. Bring to a boil, then simmer for at least 30 minutes to blend flavors.
