Comfort chicken curry

Family favorite simple chicken curry - ultimate comfort food.
Ingredients:
  • 1 brown onion, chopped
  • 2 garlic cloves, chopped
  • 3 tsp chopped fresh ginger
  • 1 fresh long green chilli, deseeded, chopped
  • 36.40 gm peanut oil
  • 20.00 gm mild Indian curry powder
  • 10 chicken lovely legs
  • 500g sweet potato, peeled, coarsely chopped
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 125ml (1/2 cup) coconut milk
  • Steamed basmati rice, to serve
  • Sliced fresh long green chilli, extra, to serve
Instructions:
  • Blend the onion, garlic, ginger, and chili in a small food processor until smooth.
  • - Heat oil in a large saucepan over medium heat. - Cook onions for 8 minutes until slightly golden. - Stir in curry powder for 30 seconds until aromatic. - Add chicken legs and sweet potato, then pour in the stock. - Simmer partially covered for 30 minutes. - Uncover and cook for 15 more minutes until thickened. - Stir in coconut milk and simmer for 5 minutes. - Serve curry with steamed rice and sliced green chilli on top.
