Ginger-glazed biscuit shortcake - a sweet delight!
Ingredients:
  • 0.5 cup butter
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 0.25 cup confectioners' sugar
  • 0.25 cup butter
  • 1 tablespoon golden syrup
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then generously grease a 9-inch cake pan or springform pan.
  • Combine smooth butter and white sugar, sift flour, baking powder, and ground ginger. Stir in flour mixture until stiff dough forms.
  • Press the dough into the pan and bake for 15-20 minutes until the shortcake is firm and lightly golden. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Transfer the cake to a beautiful serving plate. Make a delightful glaze by combining confectioners' sugar, 1/4 cup butter, golden syrup, and 1 teaspoon ginger in a saucepan. Heat over medium-low heat until the mixture is smooth and shiny. Pour the warm glaze over the shortcake and chill the cake to allow the glaze to set. Once cooled, slice the cake into 8 deliciously tempting wedges.
