Indulge in irresistible oat and butterscotch chocolate biscotti - a delightful treat for gifting.
Ingredients:
  • 1 cup packed brown sugar
  • 2/3 cup butter
  • 1/4 cup light corn syrup
  • 3/4 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 3 1/2 cups old-fashioned oats
  • 1 bag (12 oz) semisweet chocolate chips (2 cups)
  • 1 cup butterscotch chips (6 oz)
  • 2 tablespoons shortening
  • 1/2 cup coarsely chopped peanuts
Instructions:
  • Preheat your oven to 375°F and line a 13x9-inch pan with foil, ensuring the foil overhangs on two opposite sides of the pan.
  • Combine brown sugar, butter, and corn syrup in a 3-quart saucepan over medium heat until sugar melts and butter is dissolved. Remove from heat, then mix in 1/4 cup of peanut butter and vanilla. Fold in oats and press the mixture into the pan.
  • Bake until beautifully golden brown, about 20 to 22 minutes.
  • In a 2-quart saucepan, melt chocolate chips, butterscotch chips, and shortening over medium heat while stirring constantly until smooth. Take the pan off the heat, then mix in 1/2 cup of peanut butter. Spread this mixture over the baked cookie crust, and top with peanuts. Allow it to cool in the pan on a cooling rack for 20 minutes.
  • Chill in the refrigerator for 2 to 3 hours until firm. Alternatively, place in the freezer for quick cooling, then allow to sit at room temperature for 5 minutes before cutting. Use foil to easily lift out of the pan and slice into 1-inch-wide sticks with a large chef’s knife.
