Upgrade your classic French chicken dish with a splash of Australian pinot noir, creating a rich and flavorful sauce that pairs perfectly with olive oil mashed potatoes.
Ingredients:
  • 40.00 ml plain flour
  • 8 (about 1.5kg) chicken drumsticks
  • 4 rindless middle bacon rashers, cut into 4cm pieces
  • 8 eschalots (French shallots), peeled
  • 375ml (1 1/2 cups) red wine (such as pinot noir)
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 6 sprigs fresh thyme
  • 3 dried bay leaves
  • 400g button mushrooms
  • 44.40 gm tomato paste
  • 40.00 ml brandy
  • Fresh thyme, extra, to serve
  • Salt, to season
  • 1.5kg sebago (brushed) potatoes, peeled, coarsely chopped
  • 125ml (1/2 cup) extra virgin olive oil
Instructions:
  • In a plastic bag, combine the flour with a pinch of salt and pepper. Add the chicken, then shake until evenly coated.
  • In a stockpot over medium-high heat, brown half of the chicken in some oil, turning occasionally for about 5 minutes. Then, transfer the cooked chicken to a plate and repeat the process with the remaining oil and chicken.
  • Place the bacon, eschalots, and garlic in the pan and sauté for 5 minutes until the eschalots are golden. Pour in the wine, stock, thyme, and bay leaves, and bring to a boil. Gently add the chicken, then lower the heat and simmer covered for 40 minutes until tender.
  • Place the chicken on a plate and tent it with foil to keep it warm. Introduce mushrooms and tomato paste to the wine mixture. Turn up the heat to medium-high and let it simmer without a lid for 20 minutes until the sauce thickens. Sprinkle with salt and pepper. Bring back the chicken to the pan along with brandy and stir gently to mix.
  • Prepare the mash by boiling the potato in a saucepan of water until tender, about 15 minutes. Drain and return to the pan, then mash until smooth using a potato masher or fork. Stir in oil and season with salt and pepper to taste.
  • Transfer the coq au vin to a serving dish and garnish with fresh thyme. Enjoy alongside creamy mashed potatoes.
