Scallops topped with cheesy mushrooms and breadcrumbs, broiled to perfection.
Ingredients:
0.5 cupdry bread crumbs
5tablespoons meltedbutter
6ounces shreddedGruyere cheese
1cupmayonnaise
0.25 cupdry white wine
1tablespoonchoppedfresh parsley
1poundsea scallops, quartered
0.5 poundbutton mushrooms, sliced
0.5 cupchoppedonion
Instructions:
In a small bowl, combine bread crumbs with 1 tablespoon of melted butter until fully coated; set aside.
Combine cheese, mayonnaise, wine, and parsley in a separate bowl, mix well, and set aside.
Saute scallops in a skillet with 2 tablespoons of melted butter until they become opaque. Transfer them to a plate lined with paper towels and preheat the broiler to medium/high heat.
Heat the skillet over medium heat, then sauté the mushrooms and onion in 2 tablespoons of butter until tender. Stir in the cheese mixture and add the scallops back to the skillet. Cook until everything is heated through and the cheese is melted. Portion into ramekins or pour into a 11x7 inch baking dish. Top with the bread crumb mixture.
Broil 6 inches from the heat in a preheated broiler for 2 to 4 minutes until golden brown.
