Elevate your pasta with zesty coriander pesto.
Ingredients:
  • 500.00 ml fresh coriander leaves, coarsely chopped
  • 2 garlic cloves, finely chopped
  • 45g cashew
  • 35g parmesan
  • 125ml olive
  • Salt, to season
Instructions:
  • Add coriander, garlic, cashew nuts, and parmesan to a food processor. Pulse until finely chopped. Alternatively, combine the ingredients in a mortar and pound with a pestle until well mixed.
  • While the motor is running, slowly pour the oil in a steady stream until a smooth paste forms. Then, season with salt and pepper to taste.
  • Transfer the pesto to an airtight container and drizzle with a little extra oil to cover the surface, protecting it from turning black due to oxidation.
