Delightful Mexican corn cookies with customizable flavors like orange and cinnamon.
Ingredients:
1poundvegetable shortening
1.75 cups white sugar
4eggs
2oranges, zested
1tablespoonvanilla extract
2pounds white masa harina (corn flour)
3tablespoons baking powder
1.5 teaspoons ground cinnamon
1teaspoonall-purpose flour
Instructions:
In a large bowl, use an electric mixer to beat the shortening and sugar until creamy. Then, mix in the eggs, orange zest, and vanilla.
In a separate bowl, mix together corn flour, baking powder, cinnamon, and flour. Add half of the flour mixture to the shortening mixture and mix on low speed until combined. Then, add the remaining flour mixture and knead by hand until the dough comes together.
Preheat the oven to a toasty 350 degrees F (175 degrees C).
Shape each small portion of dough into a thin ring and place them on ungreased baking sheets, keeping them close together. These rings do not spread during baking.
Place the coricos in the preheated oven and bake until they are perfectly golden brown all over, approximately 45 minutes. Remember to switch the racks halfway through for even cooking.
Transfer the dish from the oven to wire racks to cool.
