Delicious summer salad with tomatoes, corn, red onion, bell pepper, and tangy balsamic dressing.
Ingredients:
  • 6 ears corn, husked and cleaned
  • 1 red bell pepper, seeded and diced
  • 0.5 red onion, diced
  • 1 medium tomato, diced
  • 0.33333334326744 cup extra virgin olive oil
  • 0.33333334326744 cup balsamic vinegar
  • 1 tablespoon minced garlic
  • ground black pepper to taste
Instructions:
  • In a large pot, cover the corn with water and bring to a boil. Cook until kernels are tender yet crisp, approximately 5 minutes. Drain and allow to cool for 5 minutes before proceeding.
  • Scrape corn kernels from cobs into a large bowl. Add bell pepper, onion, tomato, olive oil, balsamic vinegar, and garlic. Mix well and season with pepper. Refrigerate for 15 minutes before serving.
