Elevate corn with sautéed onion, celery, and basil in butter for a delightful twist.
Ingredients:
  • 2 cups frozen corn
  • 2 tablespoons butter or margarine
  • 1 medium stalk celery, thinly sliced (1/2 cup)
  • 1 jar (2 oz) diced pimientos, drained
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried basil leaves
  • 1/8 teaspoon garlic powder or 1/4 teaspoon dried minced onion
Instructions:
  • Thaw corn by rinsing it under cold water; drain. In a 2-quart saucepan, melt butter over medium heat. Sauté corn, onion, and celery in butter for 10 to 12 minutes, stirring often, until the onion is tender.
  • Add the rest of the ingredients and lower the heat. Cover and let it simmer for 3 to 5 minutes, until the corn is tender.
