Cornbread Topped Sloppy Joe Casserole

Sloppy Joe casserole with a delicious cornbread "bun" topping.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 can (15 oz) tomato sauce
  • 1 tablespoon packed brown sugar
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1 pouch (6.5 oz) Betty Crocker™ Cornbread & Muffin Mix
  • 1/3 cup milk
  • 1 egg
  • 1 cup shredded Cheddar cheese (4 oz)
Instructions:
  • Preheat oven to 350°F. Cook beef and onion in a large nonstick skillet over medium-high heat for 5-7 minutes until browned; remember to stir frequently. Drain any excess fat, then add tomato sauce, brown sugar, Worcestershire sauce, and mustard. Let it simmer for 2-3 minutes until it boils, while stirring constantly. Keep warm until ready to serve.
  • Combine corn bread mix, milk, oil, and egg in a small bowl, stirring just until moistened; the batter should be lumpy.
  • Transfer the hot beef mixture into an 8-inch square (2-quart) glass baking dish, then generously sprinkle 3/4 cup of cheese on top. Evenly spread the cornbread batter over the mixture.
  • Bake for 25 to 35 minutes or until a toothpick inserted in the center comes out clean. Sprinkle the remaining 1/4 cup of cheese over the hot casserole.
