Tangy citrus, crisp celery, sweet apples elevate classic corned beef and cabbage - perfect for any occasion.
Ingredients:
  • 1 (5 1/2 pound) corned beef brisket
  • 2 tablespoons pickling spice
  • 1 large orange, sliced in rounds
  • 1 large onion, sliced
  • 2 stalks celery, sliced
  • 0.5 cup cold water
  • 6 tablespoons margarine, divided
  • 1 large head cabbage, cored and sliced
  • 1 cup Golden Delicious apples, cored and quartered with peel
Instructions:
  • Preheat the oven to 300°F (150°C) while preparing a 9x13-inch roasting pan by lining it with aluminum foil, allowing for extra foil to cover and seal the roast.
  • After rinsing the brisket and patting it dry, massage it with pickling spice and transfer it to the roasting pan. Next, layer orange, onion, and celery slices over and around the brisket. Add 1/2 cup water to the pan and tightly seal the roast with aluminum foil.
  • Cook in the oven until the meat is tender, approximately 4 hours.
  • Roughly 45 minutes before the roast is ready, in a large pot, heat 1/4 cup of water and 3 tablespoons of margarine. Add cabbage and apples, cover, and simmer over low heat for about 30 minutes, gently shaking the pot occasionally to prevent sticking.
  • Drizzle the remaining margarine over the cabbage and apples and serve alongside sliced corned beef.
