Timeless Cornell chicken with apple cider marinade for juicy, flavorful results.
Ingredients:
  • 2 cups cider vinegar
  • 1 cup vegetable oil
  • 1 large egg
  • 3 tablespoons salt
  • 1 tablespoon poultry seasoning
  • 0.5 teaspoon ground black pepper
  • 1 (3 to 3 1/2 pound) broiler-fryer chicken, cut in half
Instructions:
  • Blend cider vinegar, oil, egg, salt, poultry seasoning, and pepper in a blender until creamy.
  • Place the marinade in a resealable plastic bag and add the chicken halves. Ensure the chicken is coated with the marinade, remove any excess air from the bag, and seal it tightly. Refrigerate for a minimum of 4 hours or preferably overnight.
  • Prepare your outdoor grill by preheating it to medium-high heat and gently oiling the grate.
  • Take the chicken halves out of the bag and place them on a baking sheet lined with paper towels. Pat the chicken dry using more paper towels. Keep the marinade to use later.
  • Preheat the grill. Place the chicken skin-side down over direct heat and grill for 2 minutes. Turn the chicken, brush with marinade, and move to indirect heat. Grill, turning and brushing with marinade, until browned and fully cooked, about 45 minutes. Ensure chicken reaches 165 degrees F (74 degrees C) using a thermometer. Let it rest for 5-10 minutes before slicing.
