Ring in the new year with a refreshing summer cocktail in hand.
Ingredients:
  • 250ml (1 cup) cranberry juice
  • 40.00 ml Cointreau liqueur
  • 42.00 gm fresh lime juice
  • 6 sugar cubes
  • 750ml pink Champagne or sparkling wine, chilled
Instructions:
  • In a medium saucepan, bring cranberry juice to a boil over high heat. Simmer, uncovered, for 10 minutes until reduced by two-thirds. Remove from heat and let cool for 30 minutes.
  • In a small jug, mix together cranberry juice, Cointreau, and lime juice. Place a sugar cube in each serving glass, then pour the cranberry mixture over the sugar. Top with Champagne or sparkling wine and serve promptly.
