Country chicken pie

Western Star brings you a delicious country chicken pie.
Ingredients:
  • 36.40 gm olive oil
  • 30g Western Star™ Original Butter
  • 1 leek, trimmed, chopped
  • 1 brown onion, chopped
  • 4 garlic cloves, finely chopped
  • 250g button mushrooms, quartered
  • 2 bacon rashers, rind removed, chopped
  • 500g chicken thigh fillets, fat trimmed, coarsely chopped
  • 80ml (1/3 cup) white wine
  • 23.40 gm seeded mustard
  • 20.00 ml plain flour
  • 200ml thickened cream
  • 40.00 ml fresh thyme leaves, chopped
  • 125.00 ml fresh continental parsley, chopped
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, lightly whisked
Instructions:
  • Preheat the oven to 200C/180C fan forced. In a large frying pan over medium-high heat, heat the oil and Western Star™ Original Butter until the butter is foaming. Add the leek and onion and cook for 4 minutes, stirring often, until softened.
  • Combine the garlic, mushroom, bacon, and chicken with the leek mixture and cook for 5-6 minutes until the chicken turns golden. Pour in the wine and simmer for 2 minutes until the liquid reduces. Mix in the mustard and sprinkle over the flour. Stir to coat for 2 minutes. Add the cream, thyme, and parsley, season, and stir constantly for 2-3 minutes until the sauce thickens.
  • Spread the chicken mixture into a pie dish, then top with pastry, trimming any extra. Press the edges with a fork to seal, make a small cross in the middle with a knife, and brush with egg. Bake for 30-40 minutes until golden and puffed.
